Swiss chard may be a “new-to-you” veggie, but it will become your new favorite instantly! Here, we’ve paired it with a homemade vinaigrette to keep the flavors bright and fresh – using maple syrup in this special dressing!
Dressing
2 tablespoons extra virgin olive oil 1 tablespoon balsamic vinegar
1 tablespoon pure maple syrup 1 tablespoon granulated sugar 2 teaspoons Dijon mustard
1 small clove garlic, minced
Salad Ingredients
1 bunch rainbow Swiss chard, thinly sliced into small strips
1 medium Gala apple, sliced and tossed with juice of 1 lemon
1/4 cup golden raisins
1/4 cup walnuts, toasted
1/4 cup diced Vidalia onion
To make dressing:
In a small mixing bowl, combine vinegar, maple syrup, sugar, mustard and garlic. Slowly whisk in olive oil in a steady stream; set aside.
To make salad:
Place Swiss chard in a large bowl, toss with dressing. Place in a serving bowl then, top with apple, raisins, walnuts and onion; serve immediately. Makes 4-5 servings.
