1 pound ground bison
1 tablespoon brown sugar
- whole egg
2 teaspoons Worcestershire sauce
2 tablespoons soy sauce
2 cups bread crumbs, plus more as needed
- 1.tablespoon lime juice
1-2 tablespoons olive oil
- 2.tablespoons Jamaican jerk seasoning
Combine all of the ingredients (except bread crumbs and oil); mix together. Begin to add bread crumbs starting with 2 cups, then adding more as needed until mixture is firm and able to be balled out.
Once mixture is firm enough, measure out into 2-ounce meatballs.
In sauté pan, add olive oil. Let temperature of pan get very hot, then brown meatballs. Finish in a 400 degree oven until internal temperature reaches 155 degrees, approximately 5 minutes. Makes about 14 meatballs.
